  • 1 egg
  • 1/2 c. cold water
  • 3/4 c. cornstarch
  • 1/4 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt (optional)
  • oil of choice for frying
  • vegetables of choice: onions, peppers, cucumbers, squash, eggplant, broccoli, etc.

Directions

    In a small bowl beat egg.

    Add 1/2 cup cold water.

    Add dry ingredients and stir until smooth.

    Dip vegetables in batter and fry in preheated oil until golden brown.

    Drain on paper towels and serve hot.
