- 3/4 c. cornstarch
- 1/4 c. flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt (optional)
- oil of choice for frying
- vegetables of choice: onions, peppers, cucumbers, squash, eggplant, broccoli, etc.
Directions

1In a small bowl beat egg.

2Add 1/2 cup cold water.

3Add dry ingredients and stir until smooth.

4Dip vegetables in batter and fry in preheated oil until golden brown.
