  • 2 quarts pineapple juice, sweeten
  • 1 fresh pineapple, chucks
  • 13 cup oil
  • 1 tablespoon salt
  • 5 lbs boneless chicken thighs, cut into 1 inch chucks
  • 24 bamboo skewers, soak in water for 30 minutes
  • shredded coconut

    Lightly salt the chicken piece and marinate the chicken in pineapple juice mixture overnight.

    Skewer the marinate chicken and pineapple chuck before placing onto the bbq gill.
