Bean Bag Vegetable Soup

- 1 1/2 cups 10 bean soup mix
- 6 cups cold water
- 1 large onion, chopped
- 2 large carrots, chopped
- 3 hot Italian sausages or 3 italian sweet sausage, sliced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 teaspoon chili powder
- 1 pinch ground cloves
- 2 tablespoons dry sherry (optional)
- 1 tablespoon lemon juice
- salt and pepper
Directions

1Rinse the bean mix, cover generously with cold water, and let soak for 8 hours or overnight.

2Drain.

3In a large saucepan, combine the bean mixture with 6 cups water.

4Bring to a boil, reduce the heat, cover and simmer for 1-1/2 hours or until tender.

5Add the onions, carrots, sausage, tomatoes, chili powder and cloves.

6Bring to a boil, reduce heat and simmer, uncovered, for 30 minutes or until the flavours are well blended.

7Stir in the sherry, lemon juice, salt and pepper.
