Bean Salad

Ingredients

  • 1 1/2 to 2 c. sugar
  • 1 c. water
  • 1 c. vinegar
  • 2 tsp. salt
  • 2 c. chopped celery
  • 1 large sweet onion, thinly sliced and separated into rings
  • 1 green pepper, diced
  • 1 large can each: kidney beans, green beans and wax beans
  • 1 small can lima beans

Directions

    Mix together sugar, water, vinegar and salt in a saucepan. Cook 10 minutes.

    Cool.

    Drain beans and put in a large dish. Cover with cooled liquid and allow to stand in refrigerator for as long as possible, or overnight.

    At serving time, add celery, onion and green pepper; toss and serve.
