Ingredients
- 3 c. dried navy beans
- 1 ham or 1/2 lb. salt pork
- 1/2 c. chopped onion
- 1/2 hot red pepper
- salt to taste
Directions

1Cover beans with water and soak 15 hours in a cool place.

2Add meat, onion and pepper; bring to boiling.

3Cover and simmer 2 to 3 hours or until beans are mushy.

4Remove meat and cut into small pieces.

5Press remaining ingredients through a sieve or food mill; add meat.

6Add boiling water for consistency, if necessary.
-
7Salt to taste.

8Pour hot into hot jars leaving 1-inch headspace.

9Adjust caps, leaving 1-inch headspace.

10Process pints 1 hour and 15 minutes at 10 pounds pressure.
