Ingredients

  • 2 tablespoons vegetable oil
  • 2 lbs ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 4 tablespoons chili powder
  • ground pepper
  • 28 ounces diced tomatoes, undrained
  • 14 ounces tomato sauce
  • 19 ounces dark red kidney beans, rinsed
  • 19 ounces black beans, rinsed
  • 19 ounces chickpeas, rinsed
  • 2 cups frozen corn

Directions

    Heat oil in a large pot.

    Brown together ground beef, onion, and garlic.

    Drain well.

    Add all remaining ingredients, including spices.

    Mix well and bring to a boil.

    Note: add corn closer to serving the chilli if you prefer a crunchier texture.

    Simmer uncovered for 30 min, stirring often.

    Cover and simmer for 60-90 minute Add tomato juice or water if consistency is too thick / simmer uncovered if too runny.

    Serve with biscuits / buns / bread.
