Ingredients
- 1 (4 to 5 lb.) fresh brisket (first cut)
- 3 to 4 stalks celery
- 4 to 6 carrots (reserve 3 after cooking)
- 1 onion, chopped
- 1/2 c. fresh chopped parsley
- 1 clove garlic, chopped
Directions

1Place brisket (fat side up) in a 9 x 13-inch aluminum pan. Cut celery and carrots in half or thirds and place on top of meat. Use celery leaves also; sprinkle chopped onion, parsley and garlic on top of this.

2Season with salt and pepper.

3Cover with aluminum foil; be sure it is sealed.

4Place in a 300° to 325° oven.

5Bake 3 to 4 hours.

6Test with meat fork at 3 hours.

7When tender, remove from oven, cool and place in refrigerator.
