  • 6 slices bacon
  • 4 lb. beef (round or sirloin)
  • 2 Tbsp. brandy
  • 2 garlic cloves, crushed
  • 2 lb. mushrooms
  • approximately 14 white onions
  • 1/3 c. butter
  • 1/4 to 1/2 c. flour
  • 3 (10 1/2 oz.) cans beef consomme
  • 1 1/2 c. Burgundy or cheap red wine
  • 2 bay leaves
  • 2 Tbsp. chopped parsley
  • 1 tsp. salt
  • 1 tsp. thyme
  • 1/8 tsp. pepper
  • 4 carrots, sliced

    Dice 6 slices of bacon; brown and remove from pan.

    Brown beef; cut in 4-inch strips.

    Put aside.

    Flame 2 tablespoons brandy.

    Saute garlic cloves, mushrooms and white onions.
