- 2 lb. beef roast
- 1/4 c. flour
- 1/4 c. butter
- 1/2 tsp. garlic
- 1/4 c. parsley
- 1/2 c. sliced carrots
- 2 c. consomme
- 1 c. dry red wine
- 12 small onions
- 3/4 tsp. thyme
- 1/2 tsp. pepper
- 1 c. mushrooms
- 1/4 c. dry red wine
Directions

1Cut meat in 1-inch cubes.

2Roll in flour and brown in butter. Stir in any remaining flour and cook 1 minute.

3Add garlic, parsley, carrots, consomme and first cup of wine.

4Cover and simmer 1 to 2 hours until meat is tender.
