Beef Enchiladas

- 12 tortillas (corn or flour)
- 3 Tbsp. oil
- 2 medium onions, chopped
- 1/2 lb. grated Longhorn cheese
- 2 (10 oz.) cans enchilada sauce
- 4 1/2 oz. can chopped green chilies
- 1 lb. ground beef, browned and drained
Directions

1Dip tortillas, one at a time, into hot oil to soften and drain on paper towel.

2Sprinkle beef, onion, cheese and pepper on tortilla and roll up.

3Place, overlapped side down, in shallow baking dish and cover with enchilada sauce.

4Top with grated cheese and bake at 350° until cheese is melted.

5A can of nacho cheese soup poured along with the enchilada sauce on top of these enchiladas is good.

6Just mix soup and sauce thoroughly and pour over top and heat thoroughly.
