- 1 lb. lean ground beef
- 1 small onion, chopped
- 3 c. frozen hash brown potatoes
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. prepared salsa
- green onions and olives, sliced (optional)
Directions

1Brown beef and onion in large skillet over medium heat (8 to 10 minutes).

2Pour off drippings.

3Stir in potatoes, salt and pepper.

4Increase heat to medium-high and cook 5 minutes, stirring occasionally.

5Stir in salsa.

6Continue cooking 8 to 10 minutes or until potatoes are lightly browned.

7Stir occasionally.

8Garnish with green onions and olive slices.
