Beef With Peppers

Ingredients

  • 2 Tbsp. oil
  • 2 to 3 cloves garlic, minced
  • 1 1/2 lb. beef tenderloin, cut in small slices
  • 1 tsp. salt
  • pepper to taste
  • 1 can consomme
  • 2 Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 2 Tbsp. water
  • 1 c. green peppers (or more)
  • 2 Tbsp. fresh ginger, chopped

Directions

    Heat pan; add oil and garlic.

    When garlic turns brown, remove.

    Add beef and brown.

    Season with salt and pepper.

    Add consomme and continue to cook until meat is tender.

    Add mixture of cornstarch, soy sauce and water.

    Cook until sauce thickens. Add green peppers, sliced lengthwise and ginger.

    Heat and serve with rice.
