Beef With Peppers

Ingredients
- 2 Tbsp. oil
- 2 to 3 cloves garlic, minced
- 1 1/2 lb. beef tenderloin, cut in small slices
- 1 tsp. salt
- pepper to taste
- 1 can consomme
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 2 Tbsp. water
- 1 c. green peppers (or more)
- 2 Tbsp. fresh ginger, chopped
Directions

1Heat pan; add oil and garlic.

2When garlic turns brown, remove.

3Add beef and brown.

4Season with salt and pepper.

5Add consomme and continue to cook until meat is tender.

6Add mixture of cornstarch, soy sauce and water.

7Cook until sauce thickens. Add green peppers, sliced lengthwise and ginger.

8Heat and serve with rice.
