- beets
- 2 c. vinegar
- 2 c. water
- 2 c. sugar
- sliced lemon
Directions

1Cook beets until tender, leaving about 2-inches of stem to prevent bleeding.

2Prepare spiced vinegar as follows: vinegar, water and sugar.

3Mix together.

4Let boil about 2 minutes.

5Tie bags of mixed pickle spices for each jar.

6Remove skim from beets; drop into mixture.

7Put in a slice lemon and bring to boiling point.

8Put in sterilized jars and seal.
