Beet-Rhubarb Compote

- 3 to 4 medium size beets
- 1 lb. rhubarb (I use Seabrook Farms frozen rhubarb)
Directions

1Wrap each beet in aluminum foil. Bake in a 350° oven until done.

2Cook the rhubarb according to directions.

3Dice cooked beets. Add to the cooked rhubarb.

4Chill. Serve as side dish. It's colorful with a different taste.
