Beet-Rhubarb Compote

  • 3 to 4 medium size beets
  • 1 lb. rhubarb (I use Seabrook Farms frozen rhubarb)

Directions

    Wrap each beet in aluminum foil. Bake in a 350° oven until done.

    Cook the rhubarb according to directions.
  3. 3
    Dice cooked beets. Add to the cooked rhubarb.
  4. 4
    Chill. Serve as side dish. It's colorful with a different taste.
