Ingredients

  • Masala
  • 1. Grated dry coconut(or roast with masala) 2cup
  • 2. Coriander seeds 2tbsp
  • 3. Cumin 2 tsp
  • 4. Roasted peanut 2tsp
  • 5. Sesame seeds, roasted 2tsp
  • 6. Water As required
  • Tempering
  • 7. Baingans the small variety 250 Gms
  • 8. Oil for deep fry
  • 9. Oil 1/4 cup
  • 10. Onions-finely chopped 1/2 cup
  • 11. Garlic paste 1/2 tsp
  • 12. Ginger paste 1/4 cup
  • 13. Tamarind pulp 2 tbsp
  • 14. Turmeric powder 1/4 tsp
  • 15. Red chilli powder 1/2 tsp
  • 16. Curry leaves 2 sprig
  • 17. Salt to taste
  • 18. Water As required

Directions

    Clean and cut the baby brinjal (put a plus mark in each Brinjal and check for the worms) and deep fry in high flame, till glossy and little tender. Strain and keep it aside.

    Make a paste all the masala ingredients together, using with little water as required.

    Heat 1/4 cup of oil in a pan add onion and saute till little brown, then add ginger garlic paste, curry leaves and saute well.

    Then add ground masala paste and stir well continuously till the fat will separates. (When the Rogan comes out).

    Next add the tamarind paste, salt, turmeric and red chilli powder then mix well, and then add the fried baingans. Turn around for a few times. Then add required water. And allow to boil on simmer for about 5 minutes as on closed with lid.

    Once oil will separate then switch off the flame, and serve hot.
