Stuffed Quahogs(Serves 4)

  • 4 medium size quahogs
  • 1 c. crushed Ritz crackers
  • 1/2 c. plain bread crumbs
  • 1 stalk celery, chopped
  • 1 medium onion, chopped
  • 1 tsp. Louisiana hot sauce
  • 1 to 2 cloves garlic, chopped
  • paprika
  • 1/4 to 1/2 c. quahog juice

Directions

    Open quahogs, save shells (wash), chop quahog meat and mix with Ritz crackers, bread crumbs, celery, onion, Louisiana hot sauce and garlic.

    Add quahog juice until moist.

    Fill quahog half shells with stuffing mix; sprinkle with paprika and bake on cookie sheet for about 30 minutes at 375°.
