1Use a 4-inch diameter strainer or flour sifter.

2Dip in hot oil to coat.

3Shake off excess.

4Line strainer with shredded potatoes. Place a 2-inch strainer on top of potatoes to keep in place.

5Dip into hot oil until golden brown.

6Tap out of strainer onto paper towels.

7Loosen with knife if necessary.

8Continue until all potatoes are cooked.

9Fill with creamed chicken or any stir-fry recipe.
