Black Bean Soup

Ingredients

  • 12 oz. black turtle beans
  • 6 to 8 c. chicken broth
  • 2 Tbsp. butter
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 c. shredded carrots
  • 1 c. shredded potatoes
  • 1 bay leaf
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1/2 tsp. black pepper
  • 3 Tbsp. lemon juice
  • lemon slices

Directions

    Soak beans for 20 hours; drain.

    Add chicken broth and heat to boiling.

    Simmer 3 to 4 hours.

    Melt butter in skillet and saute onion, celery and carrots 3 to 5 minutes.

    Add to beans along with potatoes, bay leaf, oregano and black pepper; simmer for another 45 minutes.

    Stir in lemon juice.

    Serve and garnish with lemon slices.
