Black Bean Soup

- 4 slices bacon, diced
- 1 large onion, chopped
- 1 clove garlic, minced
- 2 cans (15 oz. each) black beans (undrained)
- 1 can (about 14 oz.) beef broth
- 1 1/4 c. water
- 3/4 c. picante sauce (mild)
- 1/2 tsp. salt
- 1/2 tsp. oregano leaves, crushed
- sour cream
Directions

1Cook bacon over medium-high heat in large saucepan until crisp.

2Remove to paper towels; set aside.

3Add onion and garlic to drippings; cook and stir 3 minutes.

4Add beans and liquid, broth, water, 3/4 cup picante sauce, salt and oregano.

5Cover and simmer 20 minutes.

6Ladle into soup bowls; dollop with sour cream. Sprinkle with reserved bacon.
