Black Bean Soup

  • 4 slices bacon, diced
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 2 cans (15 oz. each) black beans (undrained)
  • 1 can (about 14 oz.) beef broth
  • 1 1/4 c. water
  • 3/4 c. picante sauce (mild)
  • 1/2 tsp. salt
  • 1/2 tsp. oregano leaves, crushed
  • sour cream

Directions

    Cook bacon over medium-high heat in large saucepan until crisp.

    Remove to paper towels; set aside.

    Add onion and garlic to drippings; cook and stir 3 minutes.

    Add beans and liquid, broth, water, 3/4 cup picante sauce, salt and oregano.

    Cover and simmer 20 minutes.

    Ladle into soup bowls; dollop with sour cream. Sprinkle with reserved bacon.
