- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 medium sweet red pepper, chopped
- 1 garlic clove, minced
- 1/2 tsp. dried basil
- 1/4 tsp. pepper
- 1 Tbsp. tomato sauce
- 1 (15 oz.) can black beans, rinsed and drained
- 1 c. long grain rice, cooked
- 1 Tbsp. cider vinegar
- 1/4 c. Cheddar cheese, shredded
Directions

1In a non-stick skillet, saute onion, peppers, garlic, basil and pepper until tender.

2Stir in tomato sauce.

3Add beans, rice and vinegar.
