Black Beans and Rice

  • 1 whole Medium Onion, Diced
  • 4 cloves Garlic, Minced
  • 4 Tablespoons Olive Oil
  • 2 cans (15 Oz. Can) Black Beans
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 1 can (11 Oz. Can) Original Ro-Tel
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Freshly Ground Pepper
  • 3 cups Rice, Cooked

Directions

    Saute onions in olive oil for 2-3 minutes on medium low heat; add garlic and saute for 2 minutes more.

    Add the beans, tomatoes, Ro-Tel and salt and pepper.

    Bring to a boil; reduce heat and simmer for 15 minutes or so.

    Serve over hot rice.
