Ingredients

  • 1 (8 oz.) pkg. cream cheese
  • 1 egg, beaten
  • 1 1/3 c. sugar
  • 5/8 tsp. salt
  • 1 (6 oz.) pkg. chocolate bits
  • 1 1/2 c. flour
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1 c. water
  • 1/3 c. vegetable oil
  • 1 Tbsp. vinegar
  • 1 tsp. vanilla

Directions

    Combine cream cheese, beaten egg, 1/3 cup sugar and 1/8 teaspoon salt.

    Beat well.

    Stir in chocolate bits.

    Set aside. Sift together 1 1/2 cups flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt.

    Add water, oil, vinegar and vanilla to flour mixture.

    Beat well.

    Fill small cupcake liners placed in muffin tin half full of flour mixture.

    Drop approximately 3/4 teaspoon of cream cheese mixture on top of each cupcake.

    Bake in preheated 350° oven for 20 to 25 minutes.

    Makes 45 miniature cupcakes.
