- 8 ounces flour, all-purpose
- 2 tablespoons wheat germ
- 1 tablespoon baking powder
- 1 pinch salt
- 3 ounces brown sugar soft
- 6 ounces milk
- 2 1/2 ounces corn oil
- 1 medium eggs beaten
- 5 ounces black currants
Directions

1Set oven to 220C/425F/Gas Mark 7.

2Line 12 deep bun or muffin tins with paper cake cases.

3Mix flour, wheatgerm, baking powder and salt together in a bowl.

4Stir in sugar.

5Gradually add milk, stirring constantly until all ingredients are moistened.

6Beat in oil and egg until you have a smooth batter.

7Stir in the blackcurrants.

8Spoon the mixture into paper cases, filling almost to the top.

9Bake for 18 to 20 minutes, until muffins are well risen, golden brown and springy to the touch.

10Leave to cool for a few minutes then lift out of tin.
