Blackeyed Pea Squash

Ingredients

  • 5 lb yellow squash
  • 3 T melted butter
  • 2 eggs
  • 1 C bread crumbs
  • 1/4 C sugar
  • 2 T dehydrated onions
  • 1/2 tsp black pepper

Directions

    Boil squash in water 3 to 5 min. until tender

    Drain well.

    Mash slightly in large bowl combine all ingredients. Mix well. Place in 3 qt greased casserole and bake uncovered 350 degrees 15 to 20 min.
