- 34 cup butter
- 1 roasting chicken, 3 lb
- 13 cup brandy
- 13 cup port wine
- 1 tablespoon flour
- 1 12 cups heavy cream, warmed
- salt and pepper
Directions

1Preheat oven to 350*.

2Lightly butter baking dish and put the rest of the butter in the chicken.

3Bake @ 350* for 35 minutes, turning the chicken over a few times.

4Remove from oven.

5Pour brandy over the chicken and light it.

6When it's burning brightly, put out the blaze with port.

7Return chicken to oven and bake 30 minutes longer.

8Remove chicken and keep warm.

9Put baking dish over medium heat and stir in flour, cooking about a minute to remove that raw flour taste.

10Add cream, stir, season to taste.

11Pour over chicken.
