  • 2 c. self-rising flour, sifted
  • 2 tsp. dried chopped chives
  • 1/4 c. shortening
  • 1/3 c. crumbled Blue cheese
  • 1/2 to 3/4 c. milk
  • 1 egg white
  • 3 Tbsp. water
  • 1/2 c. fine dry bread crumbs

Directions

    Stir together flour and chives.

    Cut in shortening until mixture resembles coarse crumbs.

    Add Blue cheese, then blend in enough of the milk to make a soft dough.

    Turn onto lightly floured board and knead gently about 20 times and then shape into 1 inch balls.

    Now, combine egg white and water.

    Dip balls into egg white mixture; roll in crumbs.

    Bake in preheated oven at 425° for 10 to 12 minutes or until golden brown.

    Makes about 4 dozen appetizers.
