- 2 c. self-rising flour, sifted
- 2 tsp. dried chopped chives
- 1/4 c. shortening
- 1/3 c. crumbled Blue cheese
- 1/2 to 3/4 c. milk
- 1 egg white
- 3 Tbsp. water
- 1/2 c. fine dry bread crumbs
Directions

1Stir together flour and chives.

2Cut in shortening until mixture resembles coarse crumbs.

3Add Blue cheese, then blend in enough of the milk to make a soft dough.

4Turn onto lightly floured board and knead gently about 20 times and then shape into 1 inch balls.

5Now, combine egg white and water.

6Dip balls into egg white mixture; roll in crumbs.

7Bake in preheated oven at 425° for 10 to 12 minutes or until golden brown.

8Makes about 4 dozen appetizers.
