Blue Corn Dumplings

- 1 cup cornmeal blue
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vegetable shortening solid
- 13 cup milk up to 1/2 cup
Directions

1Mix the blue cornmeal, baking powder and salt thoroughly in a bowl.

2Add the shortening and work the ingredients together with a pastry cutter or fork until the mixture resembles coarse meal.

3Add enough milk to make a batter of medium consistency, not too thick or too thin.

4Drop batter by teaspoonfuls on top of stew or chil in a pot.

5Cover the pot tightly and steam the dumplings for 15 minutes.

6DON'T PEEK!!

7The stew or chile should be kept simmering over medium-low heat during this process.

8After 15 minutes, remove lid and serve the stew or chili with the dumplings.
