Blue Cornmeal Muffins

- 1 c. blue cornmeal
- 3 1/2 tsp. baking powder
- 1/4 tsp. cumin
- 3/4 c. milk
- 1/4 c. chopped jalapeno peppers
- 3/4 c. all-purpose flour
- 1/2 tsp. salt
- 2 beaten eggs
- 1/4 c. oil or bacon drippings
- cream cheese (optional)
Directions

1Stir together cornmeal, flour, baking powder, salt and cumin; set aside.

2In small mixing bowl, stir together eggs, milk, oil and peppers.

3Add egg mixture all at one time to cornmeal mixture, stirring just until moistened.

4Grease muffin pans or line with paper baking cups; fill 3/4 full.

5Bake at 400° for about 15 minutes or until toothpick comes out clean.

6Remove from pan. Serve warm with cream cheese.

7Makes 12 muffins.
