Blueberry Bread

Ingredients

  • 1 stick margarine
  • 1 1/2 c. sugar
  • 1 large egg
  • 1 c. milk
  • 1/2 tsp. salt
  • 2 1/2 tsp. baking powder
  • 2 1/2 c. all-purpose flour
  • 1 tsp. vanilla
  • 2 to 2 1/2 c. blueberries (fresh, canned or frozen), drained
  • 1/4 c. sugar (for top of loaf)

Directions

    Cream the margarine. Add sugar and beat until fluffy. Add egg, milk, dry ingredients and vanilla. Mix well. Gently fold in blueberries. Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.

    Sprinkle top of each with 2 tablespoons sugar. Bake at 350° approximately 1 hour or until toothpick inserted in center comes out clean.
