- 1 cup Butter, Softened
- 2 cups Granulated Sugar
- 4 whole Eggs
- 1 teaspoon Vanilla Extract
- 3 cups All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Baking Powder
- 1 package (3.4 Oz. Size) Vanilla Instant Pudding Mix
- 1 cup Whole Milk
- 12 ounces, weight Fresh Blueberries
- 1/4 cups Coarse Sugar
Directions

1In large mixing bowl, cream butter with sugar until fluffy (about 3 minutes). Add eggs one at a time. Add vanilla.

2In separate bowl, mix flour with baking soda, salt, baking powder and pudding mix.

3Alternate adding the dry ingredients with the whole milk (in about 3 additions of each). Fold in blueberries. Fill greased muffin cups 3/4 full with batter.

4Sprinkle tops with coarse sugar.

5Bake muffins in a 350°F oven for 25-30 minutes. Makes 30 regular-sized muffins. Enjoy!
