  • 1 cup Butter, Softened
  • 2 cups Granulated Sugar
  • 4 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Baking Powder
  • 1 package (3.4 Oz. Size) Vanilla Instant Pudding Mix
  • 1 cup Whole Milk
  • 12 ounces, weight Fresh Blueberries
  • 1/4 cups Coarse Sugar

Directions

    In large mixing bowl, cream butter with sugar until fluffy (about 3 minutes). Add eggs one at a time. Add vanilla.

    In separate bowl, mix flour with baking soda, salt, baking powder and pudding mix.

    Alternate adding the dry ingredients with the whole milk (in about 3 additions of each). Fold in blueberries. Fill greased muffin cups 3/4 full with batter.

    Sprinkle tops with coarse sugar.

    Bake muffins in a 350°F oven for 25-30 minutes. Makes 30 regular-sized muffins. Enjoy!
