Blueberry Muffins

  • 1-3/4 cup Flour
  • 1/4 cups Sugar
  • 2-1/2 teaspoons Baking Powder
  • 3/4 teaspoons Salt
  • 2 whole Eggs
  • 3/4 cups Milk
  • 1/3 cups Oil
  • 1 cup Frozen Rinsed Blueberries, Or Fresh Blueberries

    Preheat your oven to 400F.

    Combine the flour, sugar, baking powder and salt in a large mixing bowl.

    In a smaller bowl combine the eggs, milk and oil with a whisk. Add this to the dry ingredients and mix gently with a spoon just until combined. Carefully fold in the blueberries.

    Pour batter into greased muffins tins, filling about 3/4 full. Place in the preheated oven and bake for about 20 minutes. Ovens do vary, so watch them to make sure they don't overcook. Check to see if they're done with a toothpick inserted in the middle.
