  • 2 eggs
  • 2 Tbsp. tapioca
  • 3/4 c. dark brown sugar
  • pinch of salt
  • 1/4 tsp. nutmeg
  • 2 lb. ripe peaches, peeled and sliced
  • 1 c. blueberries
  • pastry for two 9-inch pie crusts
  • 2 Tbsp. cream to spread over top crust before baking

    In a large mixing bowl, beat eggs until frothy and well combined.

    Add the tapioca and allow to absorb the liquid for 2 minutes.
