Boiled Custard

Ingredients

  • 1/2 gal. milk (scalded)
  • 1 1/2 c. sugar
  • 1 Tbsp. flour
  • 5 eggs, well beaten
  • 1 Tbsp. vanilla

Directions

    Scald milk in double boiler.

    Mix flour and sugar.

    Add to milk.

    Cook about 20 minutes, stirring occasionally.

    Temper well-beaten eggs with some of the hot milk, then add to rest of milk, stirring well.

    Cook 2 or 3 more minutes.

    Remove from heat; add vanilla.

    Strain and cool.

    You may also want to temper the sugar and flour with a small amount of hot milk.

    Serve with nutmeg sprinkled on the top.
