  • 4 lb. lean ground meat
  • 1/4 c. Tender Quick
  • 1/2 c. brown sugar
  • 2 Tbsp. liquid smoke
  • 1 1/2 Tbsp. black pepper
  • 2 Tbsp. mustard seed
  • 1/2 Tbsp. garlic salt

Directions

    Mix first 2 ingredients and let set overnight in refrigerator. Add remaining ingredients.

    Shape bologna.

    Bake at 250° for 2 hours, turning it every 1/2 hour.
