- 4 c. peeled and chopped tomatoes with juice
- 2 c. peeled and chopped cucumbers
- 3/4 c. diced green peppers
- 3/4 c. minced onions
- 2 c. V-8 juice
Directions

1Combine the first five ingredients.

2Blend 1/2 of this in your processor.

3Recombine the two batches.

4Add 1/3 cup olive oil, 3 tablespoons cider vinegar, salt and pepper to taste.

5Other additions are Tabasco, diced jalapeno, chopped green chiles or red pepper flakes.

6Chill very thoroughly.

7Serve with an ice cube in each bowl.
