Bourbon-Pecan Bread

  • 1/4 c. butter or margarine, softened
  • 1 c. sugar
  • 1 large egg
  • 1 c. milk
  • 1/2 c. bourbon
  • 3 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. salt
  • 1 1/2 c. chopped pecans
  • 2 tsp. grated orange rind
  • 2 Tbsp. bourbon

Directions

    Beat butter at medium speed with an electric mixer until creamy.

    Gradually add sugar, beating well.

    Add egg, beating well.

    Combine milk and 1/2 cup bourbon.

    Combine flour, baking powder and salt.

    Add to butter mixture alternately with milk mixture, beginning and ending with flour mixture.

    Stir in 1 1/4 cups pecans and orange rind.

    Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan.

    Sprinkle with remaining pecans. Bake at 350° for 1 hour and 10 minutes.

    Drizzle with 2 tablespoons bourbon.

    Cool in pan on a wire rack.
