  • 1 sirloin steak, deboned
  • olive oil
  • parsley, chopped
  • basil, chopped
  • garlic, chopped
  • sopressata or cooke salami
  • Fontina cheese or Provolone cheese
  • salt
  • pepper
  • 16 oz. tomato sauce

Directions

    Butterfly steak.

    Spread parsley and garlic over it.

    Cover it with alternate strips of sopressata and cheese.

    Roll and tie with string.

    Saute in oil, turning to brown all around.

    Pour in tomato sauce, basil, salt and pepper to taste.

    If sauce is too acid, add some sugar.

    Simmer until meat feels tender when pierced with fork.
