Braised Beef Shortribs

- 1/2 onion diced
- 2 carrots peeled and diced
- 2 celery stalks diced
- lots of garlic minced
- 1/2 cup tomato paste
- 1 cup canned tomatoes chopped
- 2 cups veal stock
- 2 cups water
- salt and pepper to taste
- 5-6 beef shortribs
Directions

1Season ribs with salt and pepper

2Grill ribs for about 2 minutes on each side

3Combine all other ingredients in a roasting pan

4Season liquid to taste

5Submerge ribs in the braising liquid

6Cover and bake for 2 1/2 hours at 350 degrees until fork tender
