  • 1 c. finely chopped onion
  • 2/3 c. chopped carrots
  • 2/3 c. chopped celery
  • 1 tsp. minced garlic
  • 1 tsp. minced lemon peel
  • 6 skinless chicken thighs
  • 3/4 c. flour
  • 1/2 c. oil
  • 1 c. white wine
  • 1 1/2 c. chicken stock
  • 1 (1 lb.) can tomatoes, cut up with juice
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 2 bay leaves
  • 2 sprigs parsley
  • salt and pepper

Directions

    Combine onions, carrots, celery, garlic and butter in a large Dutch oven.

    Cook over medium heat 8 to 10 minutes.
