Braised Chorizo

Ingredients
- 1 lb dried spoanish chorizo sausage, pricked several times with a fork
- 4 12 cups red wine (1 bottle, such as Rioja)
- 4 garlic cloves, thinly sliced
- 6 sprigs oregano, plus more for garnish
- 4 slices orange zest (each about 4-inches longm, and 1 1/2 inches wide0)
Directions

1Place all of the ingredients in a medium saucepan.

2(Wine should come halfway up side of chorizo).

3Bring to a boil over medium-high heat.

4Reduce heat and simmer, flipping chorizo once, until sausage is tender and liquid has been reduced by half about 20 minutes.

5Discard oregano sprigs.

6Cut chorizo diagonally into 1/4 inch slices, and arrange on plates.

7Drizzle with braizing liquid, and garinsh with additional oregano sprigs.
