Braised Red Cabbage

- 2 Tbsp. oil, butter or margarine
- 1 small head red cabbage, thinly sliced
- 1/2 c. chicken broth
- salt and pepper to taste
- 3 Tbsp. balsamic or apple cider vinegar
- 1 Tbsp. brown sugar
- 1/4 c. pecan halves, toasted
Directions

1In large saucepot, heat oil over medium heat.

2Add red cabbage and cook 5 minutes until wilted, stirring occasionally. Add chicken broth, salt and pepper.

3Bring to a boil over high heat. Reduce heat to low; cover and cook mixture 20 minutes. Carefully drain off any excess liquid; leave pot off heat.

4Add balsamic vinegar and brown sugar to cabbage; toss mixture until braised cabbage is well coated.

5Just before serving, stir in toasted pecan halves.

6Serve immediately.
