  • 1 egg
  • 3 Tbsp. vegetable oil
  • 1 1/2 c. 100% bran cereal
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/2 c. raisins
  • 1 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. brown sugar

Directions

    Combine raisins and pineapple; let set overnight.

    Beat together the first 2 ingredients.

    Stir in bran cereal; let stand 5 minutes.

    Stir together the flour, baking powder and salt; blend in brown sugar.

    Add bran mixture, stirring just until combined.

    Add pineapple-raisin mixture.

    Fill greased muffin pan cups 2/3 full. Bake in a preheated hot oven (400°) for 18 to 20 minutes, or until done.
