- 1 egg
- 3 Tbsp. vegetable oil
- 1 1/2 c. 100% bran cereal
- 1 (8 oz.) can crushed pineapple, drained
- 1/2 c. raisins
- 1 c. flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. brown sugar
Directions

1Combine raisins and pineapple; let set overnight.

2Beat together the first 2 ingredients.

3Stir in bran cereal; let stand 5 minutes.

4Stir together the flour, baking powder and salt; blend in brown sugar.

5Add bran mixture, stirring just until combined.

6Add pineapple-raisin mixture.

7Fill greased muffin pan cups 2/3 full. Bake in a preheated hot oven (400°) for 18 to 20 minutes, or until done.

8Makes 12 muffins.
