- 1- 16 oz. can tomatoes
- 1 -10 oz. can enchilada sauce
- 1/4 c pitted ripe olives, sliced
- 1 tsp salt
- dash of pepper
- 1 lb ground beef
- 1/2 c cooking oil
- 8 tortillas
- 4 oz. (1 c) American cheese
- 1 c cream style cottage cheese
- 1 egg slightly beaten
Directions

1Brown hamburger meat then add first 3 ingredients plus salt and pepper.

2Simmer

3for 20 minutes.

4Heat oil in skillet.

5Cut 2 tortillas into quarters.

6Brown until golden and crisp.

7Set aside.

8Cook and brown the remaining tortillas and break these up for chips.

9Stir the hamburger meat mixture occasionally as you brown the tortillas. Combine the American cheese, cottage cheese, and egg in a bowl.

10spread 1/3 of the meat mixture then 1/2 of the broken chips.

11Repeat this ending up the the two quarter tortilla chips as a topping for the Mexican Lasagna.

12Bake at 350 degrees for 30 minutes.

13Let set for 5 minutes.
