- 3 c. 100% bran (1 c. of this in water)
- 1 c. boiling water
- 1/2 c. margarine
- 1/2 tsp. salt
- 1 1/2 c. sugar
- 2 eggs
- 2 c. buttermilk
- 1/4 lb. chopped dates
- 1 c. raisins
- 1 c. chopped walnuts
- 2 1/2 c. flour
- 2 1/2 tsp. baking soda
Directions

1Mix 1 cup bran and water and let stand 1/2 hour.

2Cream together margarine, salt and sugar.

3Add eggs.

4Add buttermilk and mix.

5Add dates, raisins and nuts.

6Add flour, baking soda and 2 cups 100% bran and stir until just blended.

7Add bran and water mixture.

8Stir only to blend.

9Bake at 350° for 20 to 25 minutes. Makes 24 to 30 muffins.
