  • 1 1/4 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. sugar
  • 2 1/2 c. bran flakes *
  • 1 c. raisins *
  • 1 1/4 c. milk
  • 1 large egg or 2 small
  • 1/4 c. vegetable oil
  • 1/2 c. coconut

Directions

    Stir flour, baking powder, salt and sugar; set aside.

    Measure bran flakes and milk into a large bowl.

    Stir and let stand 1 or 2 minutes.

    Add egg and oil.

    Beat well.

    Add flour mixture, stirring only until combined.

    Stir in raisins and coconut.

    Spoon into greased muffin tin and bake at 350° to 375° for 18 to 20 minutes.
