- 2 1/2 c. flour
- 2 1/2 tsp. baking powder
- pinch of salt
- 1 c. sugar
- 1 stick butter, melted and cooled
- 2 large eggs, beaten
- grated zest of 1 lemon or 1 tsp. lemon extract
- 1 to 2 Tbsp. milk (if needed)
Directions

1Stir together flour, baking powder, salt and sugar.

2Make a well in the center.

3Pour in butter, eggs and lemon.

4Mix thoroughly, kneading well so it is smooth.

5If dough won't hold together, add some milk.

6Should be the consistency of pie dough or a cookie dough that could be rolled out.

7Should be stiff enough to hold its shape.

8Shape the dough in a circle, like a wreath.

9Place in a buttered 9-inch round cake pan.

10Bake at 375° for 25 to 30 minutes.

11Cool.

12Slice for serving.

13Serve as a cookie or biscuit with wine.
