- 1 loaf day-old Tuscan bread, cut into 1-inch cubes (do not remove the crusts)
- 5 teaspoons minced garlic
- 1 tablespoon finely chopped fresh thyme
- 3 tablespoons extra virgin olive oil
- Salt
- Freshly ground black pepper
Directions

1Preheat the oven to 375 F.

2Spread the bread cubes in a single even layer on a baking sheet.

3Bake until very crispy and dry, about 20 minutes, stirring occasionally to prevent burning and to make sure all the sides are toasted.

4Remove and let cool.

5Working in small batches, place the cooled bread cubes in a food processor and pulse to fine crumbs.

6Shake all the crumbs through a mesh strainer or sieve into a large bowl.

7This will filter out the larger pieces, making all the crumbs of uniform size.

8Add the garlic, thyme, olive oil, and salt and pepper to taste.

9Using the palms of your hands, rub all of the ingredients together.

10The result should be very uniform, highly flavored bread crumbs.
