Bread Crumbs

6 ingredients
10 steps

Ingredients

  • 1 loaf day-old Tuscan bread, cut into 1-inch cubes (do not remove the crusts)
  • 5 teaspoons minced garlic
  • 1 tablespoon finely chopped fresh thyme
  • 3 tablespoons extra virgin olive oil
  • Salt
  • Freshly ground black pepper

Directions

  1. 1
Preheat the oven to 375 F.
  2. 2
Spread the bread cubes in a single even layer on a baking sheet.
  3. 3
Bake until very crispy and dry, about 20 minutes, stirring occasionally to prevent burning and to make sure all the sides are toasted.
  4. 4
    Remove and let cool.
  5. 5
Working in small batches, place the cooled bread cubes in a food processor and pulse to fine crumbs.
  6. 6
Shake all the crumbs through a mesh strainer or sieve into a large bowl.
  7. 7
This will filter out the larger pieces, making all the crumbs of uniform size.
  8. 8
Add the garlic, thyme, olive oil, and salt and pepper to taste.
  9. 9
Using the palms of your hands, rub all of the ingredients together.
  10. 10
The result should be very uniform, highly flavored bread crumbs.
