Ingredients
- 2 1/3 c. sugar
- 2/3 c. vegetable shortening
- 4 eggs
- 2/3 c. water
- 3 1/2 c. flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- fruit (your choice 2 c. chopped apples or 2 c. shredded carrots or 2 c. mashed bananas, or 1 1/2 c. applesauce or 1 c. grated zucchini)
Directions

1Grease insides of 6 wide-mouth canning jars (1 pint size), but not the rims.

2Place on baking sheet.

3Cream the sugar and shortening.

4Beat in eggs and water.

5Add fruit.

6Sift flour, cinnamon, baking powder, soda and salt together.

7Add to batter. If desired, add raisins and/or nuts.

8Put 1 cup of batter into each jar (no more).

9Bake 45 minutes at 325°.

10Remove from oven; wipe rims.

11Cover with hot, flat canning lids and screw tightly.
