  • 2 eggs
  • 2 cups skim milk
  • 12 cup Splenda sugar substitute
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 14 teaspoon salt
  • 2 cups bread cubes
  • 14 cup raisins
  • 14 cup dried apricot

Directions

    Whisk together eggs, milk, Splenda, cinnamon, vanilla and salt.

    Stir in bread cubes, raisins and apricots.

    Pour into a greased 8x2-inch round baking dish.

    Place in a 13x9-inch pan and place on oven rack.

    Pour hot water into larger pan until 1-inch depth.

    Bake at 350F for 45-50 minutes or until knife inserted halfway between edge and center comes out clean.
