Bread Pudding(Lo-Cal)

Ingredients

  • 1 loaf (6 to 8 c.) stale French bread (dry for 2 days)
  • 4 c. milk
  • 6 Tbsp. Equal or NutraSweet, or to taste
  • 3/4 c. egg substitute
  • 2 Tbsp. vanilla
  • 1 c. raisins
  • 1/4 c. chopped pecans (optional)
  • 4 Tbsp. reduced calorie margarine, melted
  • 1/2 tsp. cinnamon

Directions

    Combine all ingredients; mix just until bread is moistened. Pour into a 9 x 13-inch pan sprayed with Pam or the like.

    Place in a nonpreheated oven.

    Bake at 375° for 1 hour and 15 minutes. Serve alone or with fat-free ice cream or frozen yogurt.
